There are several different origin stories for the chocolate truffle but the best one takes place in the kitchen of legendary French chef Auguste Escoffier. In the 1920s, one of Chef Escoffier’s apprentices was attempting to make a pastry cream when he accidently poured hot cream into a bowl of expensive chopped chocolate. He called his apprentice “ganache” which is a derogatory term meaning fool. Chef Escoffier took the bowl and started stirring. He noticed it formed a sauce that he could use to coat things in. He could also work the paste into a bumpy ball that he could roll in cocoa powder. This creation resembled the desirable fungus truffle from the French Perigord region. This concept developed and ganache was rolled in different toppings such as nuts and castor sugar. Recipes traveled to other countries and each country added its own personal touch.
